Production notes
Selection of Grenache from schist soils, imparting a delightful minerality. Harvesting is carried out at night. The grapes are crushed and placed in vats for maceration lasting 4 weeks, extending to 6 weeks for the ripest Syrah and Grenache. Traditional vinification is employed, with grape varieties vinified separately, accompanied by pump-overs and rack-and-return techniques. The wine is aerated, and the lees are stirred back into suspension throughout the post-fermentation maceration phase to enhance the wine's richness and round out its tannins.
Tasting notes
A sparkling ruby hue. This exceptional Minervois offers a symphony of strawberry, raspberry, and blackberry aromas, lifted by subtle hints of spices and wood. On the palate, it is powerful, refined, and boasts remarkable concentration. The Cuvée Excellence reveals its full potential when paired with braised beef in tomato and red wine sauce, leg of lamb, duck breast with porcini mushrooms, a mushroom fricassée, or aged cheeses.
