About this winery
The Domaine Fouet has been perpetuating family tradition for six generations. In the heart of the Saumur-Champigny appellation, Julien Fouet now manages a 23-hectare vineyard (6 hectares of Chenin in Brézé, 15 hectares of Cabernet Franc, and the rest in Grolleau and Pinot d'Aunis). In conversion to organic farming since 2017, the estate will be certified starting from the 2020 vintage.

Product notes
The ancestral method is favored here in the production of this cuvée: the alcoholic fermentation begins in vats, and the must is bottled. Fermentation continues in the bottles, releasing gas. There is no addition of sugar or expedition liqueur for dosage. It is solely the grape's sugar that, throughout the process, will ensure the first fermentation, the creation of bubbles, and the residual sugar.
Tasting notes
This sparkling wine, made in a very natural way without added yeasts, offers very fine bubbles and a supple, rounded palate. Ripe apple, dried fruits, lemon zest, and straw characterize the profile of this intriguing sparkling wine.
