About this winery

Founded in 1825, Domaine Faiveley is one of Burgundy's greatest domaines. Originally the company was a classic negotiant business, based in Nuits St. Georges and engaged in the buying and selling of wine but not the production of it. After seven generations of steadily acquiring properties throughout the Cotes de Nuits, the Cotes de Beaune, Cotes Chalonnaise and now Chablis, the Faiveley family have established themselves as the most important vineyard owners in Burgundy, with 120 hectares of...

Product notes

By royal ordinance from Louis-Philippe, the name "Chambertin" was added to the name of the village and it officially became "Gevrey-Chambertin" in 1847. The parcel selection of old vines aged over 35 years old produces an exceptionally intense and aromatic wine.

Production notes

The grapes are harvested and sorted by hand. The proportion of de-stemmed grapes and whole clusters varies depending on the vintage. The wines are punched down daily in order to extract colour, tannins and aromas from the skin of the grapes. After a 19 day vatting period, the alcoholic fermentation is complete. The free-run wine is run off using a gravity system whilst the marc is pressed slowly and gently in order to extract an exceptionally pure press wine. The wines are aged for 14 months in French oak barrels (20-30% new oak) which have been selected for their fine grain and moderate toast. The wines are left to age in our hygrometry-controlled cellars at consistent, natural temperatures. The wines are aged in vats for 2 months at the end of the ageing process.

Tasting notes

These 35 years old vines produce an exceptionally intense and aromatic wine that reflects the unique character of its terroir. With its deep, clear ruby red hue, it reveals notes of black fruits and excellent strength and concentration. As with all Gevrey-Chambertin, it requires a few years of patience before reaching its full potential.

(Vintage 2020)

Shows a lot of finesse and elegance, with a bright cherry fruit, abundant floral notes and enough freshness to carry it through to a rewarding conclusion. The house owns nearly one hectare in Lavaux St-Jacques. In 2020, the fruit was picked at 13.5% and fermented with a good proportion of whole clusters before being run into cask (38% new) for ageing.

(Vintage 2018)

Encore marqué et serré par un boisé strict, Lavaux Saint-Jacques ne manque pas de fruit élancé, de finesse et d’allonge, mais il faudra être patient et espérer son épanouissement.

Julia Harding MW, November 2019 (Vintage 2018)

Barrel sample. Light to mid cherry red. Intense and pure red cherries on the nose with an attractive hint of crushed rocks. The oak hiding behind the fruit. On the palate, the oak is more evident, both in tannin and in spice. But there is an apparent restraint that hides the greater power here. Chewy, incredibly fine tannins, compact. All closed up at the moment but all in balance.
