Production notes

25% of the fruit was retained as whole clusters with the remainder carefully de-stemmed directly to the fermenters by gravity without harsh pumping. Long pre-fermentation soaks of 8-10 days prior to fermentation with indigenous yeasts and punched down by hand up to three times per day with a total time on skins of 21-23 days. Pressed off and barrels filled immediately by gravity to the underground barrel cellars. The wine spent 16 months in barrel (35% new French) with two rackings and no fining or filtration, before bottling in early-August 2016.

Tasting notes

The nose is vivid, fine and elegant with not one component vying for attention. This exquisite harmony is echoed on the palate where the refinement and ethereal nature of the wine demands deeper contemplation and careful respect. The wine is not heavy yet has solid underlying tannins giving the finish a serious structure and length. A classic Block 5.

This is as chunky red with deep and rich red berry and ripe strawberry character with chocolate and hazelnut. Full and creamy textured with a long and flavorful finish. Very polished. Still slightly closed. From biodynamically grown grapes with Demeter certification.
