Production notes
Harvested at night, destemmed, pressed, and cold settled for a week. The juice is then cold fermented for 9 days, capturing the delicate characteristics of the fruit. After fermentation, the wine is stabilized and filtered before being bottled.
Tasting notes
The color is light straw with a slight green hue. On the nose, there are aromas of lemon, mandarin, yellow stone fruits, and pineapple with iodized nuances. On the palate, fresh nectarine and pear dominate, followed by hints of baked apple and notes of sage. A fine talc-like mineral texture is supported by soft, effervescent acidity, and a crisp finish.
