Paxton is Australia's leading producer of biodynamically farmed grapes, managing 300 acres of vines spread across the diverse terroirs of McLaren Vale.The company was founded in 1979 by renowned viticulturist David Paxton, although the family did not release the first Paxton wines until 2000. Product notes

Hand picked at optimum sugar and flavour equilibrium, the grapes were kept on skins for 15 days. The ferment was pumped over and plunged twice a day to extract colour, flavour and tannin structure. Once pressed, we used a combination of French and American oak barriques (30% new) for maturation of up to 20 months prior to blending and bottling. This wine was cellared for a further 12 months prior to release.
