Paxton is Australia's leading producer of biodynamically farmed grapes, managing 300 acres of vines spread across the diverse terroirs of McLaren Vale.The company was founded in 1979 by renowned viticulturist David Paxton, although the family did not release the first Paxton wines until 2000. Product notes

The grapes were hand picked and selector harvested at optimum flavour and sugar equilibrium. 20% of the harvest was used as whole bunches while the remainder was delicately destemmed over the top of the whole bunches. The ferment was 100% wild/ natural yeast. The small batch ferments were carefully plunged and pumped over for 14 days to extract colour, flavour and tannin structure. The ferments were pressed to new and mature French oak barriques, where they were nurtured for 12 months prior to blending and bottling.

Tasting notes

COLOUR: Deep red with a vibrant purple hue. AROMA: Bright lifted red berry fruits, with a distinctive whole bunch and wild ferment character. Packed full of fruit with a raspberry tartlet biscuit fragrance. PALATE: Medium to full bodied, this wine is powerful and seductive, with concentrated fruit and a delicate balance of French oak and silky tannins.
