About this winery
Domaine Simon Bize et Fils is a truly classic Burgundian family domain: not large (22 hectares, with small plots spread across many appellations), but not too small, with production of about 7,000 cases per year; resolutely old-fashioned (wines typically feature 100% stem inclusion and discrete use of oak), and committed to making age-worthy wines from low-yielding old vines. Product notes
The 1.6 ha vineyard is located under Lavières, on calcareous soil, reddish clay with gravel.
The winemaking aims at respecting the soil diversity with an emphasis on finesse and elegance over power and exaggerated extraction. Once at the winery, grapes are sorted to remove those affected by rotting or immature, then conveyed in wooden vats.
Production notes
We use very little or no new barrels for the aging of red wines. The age of the barrels varies from 1 to 6 years to preserve the Pinot Noir's delicate and typical aromas. The malolactic fermentation occurs randomly and can last from January to June
Only one bleed is done after a year of breeding to assemble wines in stainless steel vats in which they gradually prepare wine for bottling without fining or filtration.
Tasting notes
The wine is more sustained, more masculine, with a very good ageing potential.

Neal Martin, (Vintage 2017)The 2017 Savigny-lès-Beaune Les Grands Liards has a tightly wound, focused bouquet of blackberry, raspberry coulis and subtle orange peel aromas that feel harmonious. The palate is medium-bodied with grainy tannin and very good acidity and energy. Very impressive for a Village Cru - perhaps a Premier Cru in all but name. Highly recommended.

Neal Martin, January 2020 (Vintage 2018)The 2018 Savigny-lès-Beaune Les Grands Liards 1er Cru has a harmonious and nicely focused bouquet of brambly black fruit, pressed iris flowers and a light incense aroma. The palate is well balanced with plenty of energy and gentle grip. The surprisingly succulent finish leaves black olives on the aftertaste.
