Production notes

Fermented with 40% full cluster. Small containers of unfermented must are immediately removed (sweet and not fermented) and frozen. The wine stays 15 days without much pumping and without yeast. It is left in old wooden casks without sulfur and let malolactic fermentation happen. When completed, it is time to decant and add SO2, the sweet must is defrosted and dissolved in the wine, then bottled. Gradually the sweet wine begins to ferment in the bottle. From time to time, the bottles are moved and then left standing to ferment and age.

Tasting notes

Ruby-red color, Freisa has a floral and fruity aroma of concentrated berries and tar with hints of blackberry. It is a full-bodied wine, with a refreshing acidity, rich and soft tannins finesse, excellent balance, great complexity, integration and a long lingering finish. Freisa is lightly sparkling.
