Indice 2. The Heimbourg vineyard is located on a small south-west to north-west facing little hill at the east of Turckheim. The top part, more exposed to the winds and with a thinner soil, is perfectly adapted to the Pinot-Gris grape. Not receiving the full intensity of the sun in the morning means also that this vineyard ripens the grape slower, slows down the apparition of botrytis and can keep a nice acidity balance. In 2014, it wasn’t possible to allow too much botrytis development. The fermentation was slow and eventually the wine finished fermenting with a small residual sweetness. This vineyard also produced a very small yield in 2014.
