Parés Baltà is a family owned winery in the Penedès region of Spain with traditions dating back to the 18th century. In 1790, the first vines were planted on the estate that now surrounds the winery. After a light skin maceration during four hours, the grapes were lightly pressed, and then fermented in stainless steel tanks during 18 days at an average temperature of 16 °C. Once the fermentation was finished, the wine was kept in contact with the fine lees for 3 months, applying daily battonage some minuts per day. The grapes come from Finca Pares Balta, located 254 meters above sea level where the soils are limestone and chalky. The vineyards are biodynamic and have Demeter certification, the cultivation is done organically under the seal of the Catalan Council of Organic Production (CCPAE). They use a flock of sheep which gives them natural fertilization for the soil and bees that help to pollinate and to bring the essence of the Mediterranean ecosystem to the grapes.
Very pale yellow with green tinges. Bright and clean. The very varietal nose clearly combines the aroma of mature pear, almost caramelized, and banana with creamy notes coming from the work of the fine lees. On the palate, the wine is fresh, but surprisingly ample with a good balance and acidity. It reminds us of a pear Tarte Tatin with Crème Anglaise. Organic wine certified by Demeter.
Lovely aroma of ripe pears and creamy stone fruit, really creamy, somehow like puréed fruit with a touch of vanilla even though the wine is unoaked and tangy. The lees have given a richness on the nose and a touch of spice on the palate. Bags of lovely fresh yet rounded fruit and a surprising intensity on the palate for a wine with such moderate alcohol. Fresh aftertaste that is more swtony than fruity.
