Acaibo means «three fishes» in Pomo dialect .Pomo is a native american tribe who lived and hunt in northern California and what is now Sonoma SonomaCounty. This name of the property pays homage to the children children of Claire &Gonzague and to the three grape varieties that are planted here. Originally from the Bordeaux region of France, we have focused on :Cabernet Sauvignon, Cabernet Franc and Merlot.

Élaboration du produit

Une fermentation parcellaire (par petits lots) est réalisée en cuves d’acier inoxydable thermorégulées. Une macération à froid de quatre jours précède la fermentation alcoolique. La fermentation malolactique s’effectue ensuite en barriques.
