Farinetti cites this 1982 as his inspiration to reintroduce fermentation in cement with indigenous yeasts. Considered an excellent year, from summer through to harvest it was warm and dry with lots of wind and little humidity. It is properly garnet in colour, yet energetic and animated on the nose, possessing a wild, meaty personality along with truffle, wet soil and forest fragrances. Corseted and dense, the palate offers mouthwatering acidity and a savoury edge, while pepper and clove notes lace the finish This is simply a pleasure to drink.
