About this winery

Parés Baltà is a family owned winery in the Penedès region of Spain with traditions dating back to the 18th century. In 1790, the first vines were planted on the estate that now surrounds the winery. Today however, more than 220 years later, almost everything is different. The acquisition of the winery in 1978 by Mr. Joan Cusiné Hill, born in 1917 in Bellvei del Penedés, and the addition of the exemplary estates “La Torreta” and “Els Pujols” mark the beginning of the Parés Baltà...

Product notes

Cuvée de Carol is a cava with an irresistible personality that will satisfy the most exquisite palates. It is made mainly with the traditional variety of cava, the macabeo from Cal Jepet, an old vineyard of the Cal Miret estate. We combine it with a small percentage of chardonnay, grown at altitude and with a slight ageing in oak barrels. The Cuvée de Carol cava reflects the tradition of elegance and refinement of the most precious sparkling wines. Dedicated to Maria Angels Carol, whose children are the third generation in charge of the winery. The Macabeo is fermented in stainless steel tanks at 16ºC for 15 days with daily remuage at the end of fermentation. The chardonnay ferments at 16-20ºC in new French oak barrels for 13 days. Ageing on lees for 2 months with batonnage 3 times a week for the chardonnay. Second fermentation in the bottle according to the traditional method, aged for approximately 90 months.

Tasting notes

Straw yellow with hints of new gold. Sophisticated aroma coming from the oak ageing. It has creamy notes reminiscent of candied fruit with well-balanced toasted nuances. In the mouth it is full-bodied and one can appreciate that it is a different cava. Long and persistent aftertaste. Complex and with a very well integrated carbonic.
